Jurassic Scotch egg




Giant scotch Egg


I made a Giant Scotch egg using Lincolnshire Ostrich egg and Surrounded with Traditional Lincolnshire Sausage meat and bread crumb.
I had to improvise all the way to create this finished result, But everything worked out as i had seen in my mind.

  1. I Boiled the Egg for 40 minutes  and then left to cool for about an hour with cold water.

  2. Then i got a glass mixing bowl and lined the walls with plastic film and in went the sausage meat. 

  3. Press the meat against the wall, right to the top of bowl.

  4. Tap around the middle of the egg lightly and keep turning, eventually the egg will start to crack, so remove all the shell.

  5. Place the peeled Egg in the middle of the meat and then pull the film around the egg and work it into a ball.

  6. Cover the meat with olive oil then roll in bread crumb slowly and carefully.

  7. Preheat Oven at 210 or 190 Fan assisted 

  8. Carefully lift into Roasting Bag and place on oven dish then onto middle shelf of oven.

  9. Cook for 35-40 mins then carefully tip onto another oven dish to flip over to enable to cook other-side, for 30 more minutes.

  10. Remove the Roasting film and leave to stand for an hour then put in fridge until cold.


Now its ready to share and enjoy this Jurassic Scotch Egg
